How do I join a shoulder seam on a baby sweater without bulk?

How about three needle bind off. It's not so bulky as two needle co and sew.
If you aren't sure, make two swatches and bind off with three needles to see if you like the effect.
I just happen to believe a shoulder needs a little stabilizing that binding off gives it. Otherwise the shoulder will stretch and sag.

How to do seams for baby sweaters

It's best to graft the stitches on a baby sweater, you do not cast off the stitches just knit extra rows in a different colour and when you come to sewing up just carefully unravel the extra rows stitch by stitch and sew each stitch on the shoulders together giving a seamless seam.
